We recommend marking off an oval space approximately five feet long and three feet wide (though the dimensions may vary depending on the size of your lamb) with rocks or bricks. Place the poles or posts for your spit to rest on at opposite ends of the oval. Then, line the open space with two to three layers of tin foil. After that, empty two to three bags of wood charcoal in the middle of the roasting space.Step 6: Get Ready to Burn It!The charcoal, that is! Depending on when your guests are arriving and when you plan to eat, you want to leave about four hours for the coals to burn down as well as for the lamb to cook. A 30-pound lamb should take around five hours, bringing your total time to around eight to nine hours, give or take. What we’re saying is that spit roasting an entire animal is a time-consuming process, and that needs to be taken into consideration. Once the charcoal is burned, you’re going to want to have some extra on hand so you can periodically add some to ensure the heat does not dissipate over time.Step 7: Preparing the LambA 30-pound lamb should take around five hours to cook, bringing your total time to around eight to nine hours, give or take.You could just throw the lamb on the spit and call it a day, but with so much time spent cooking, you’re going to want to prepare the lamb so that it does not dry out (and so, you know, it tastes good). To season and prep the lamb, lay down a number of clean garbage bags on a flat surface and set the lamb on them. Rub the lamb with seasoning (olive oil, salt, pepper, oregano, or whatever you desire) both inside and out. Whether you choose to stuff your lamb is up to you. If you do, you’ll want butcher’s twine handy to sew the cavity back up when you’re done. Now it is time to attach the spit. Slide it through and, once this is done, use metal wire to tie the legs to the spit to ensure that the lamb doesn’t spin while turning (imagine the lamb’s legs are in a Superman flying position when securing them).Step 8: Roasting the LambOnce the charcoal is no longer emitting open flame, set your lamb and spit across the cooking area. Start with your lamb somewhat close to the coals (not so close as to touch, but on the lower level of the spit — about 18 inches above the coals). After 45 minutes or so, raise the lamb to the higher level for the remainder of the cook. As the lamb begins to roast, spread the coals evenly beneath the length of the meat. Occasionally, add a few more pieces of charcoal.As the lamb cooks, you’ll want to keep it moist. Basting every 15-20 minutes will do just that. We recommend using the same kind of mixture you used in the beginning to season the meat. Depending on what doneness you want your meat, keep an eye on the lamb and have your meat thermometer handy. To check the temperature, you’ll want to go for the thickest part of the animal, the leg. Medium-rare is around 145 degrees Fahrenheit. Brand new for 2019, Lake Shore Fog is brewed with Mosaic, Amarillo and Citra hops and is also mild on the bitterness front. What makes this beer stand out is the sweet malt base that accompanies the stone fruit and pineapple flavors. It’s substantive at 6.5% ABV, and also a refreshing thirst quencher.Swipe Light is a choice for drinkers who want the more complex flavor profile of a craft beer, but with lower alcohol, fewer calories and almost no bitterness. At only 4% ABV and a lowly 15 IBUs, Swipe Light has a hint of citrus and a sweet biscuit character that put it at the top of the pack in this increasingly crowded craft beer segment. Tiki Laverdiere homicide Retired defence lawyer shares insights on how case could

It’s unusual for a large group of people to stand trial at the same time, as may turn out to be the case in the homicide of Tiki Laverdiere, a retired high-profile defence lawyer says.Bill Roe, who is now a sessional lecturer for the College of Law at the University of Saskatchewan, has a wealth of experience with high-profile cases, including the trial of Curtis Dagenais, who was convicted of killing two Saskatchewan RCMP officers.Speaking in general terms, Roe shared his insights into how a case with multiple defendants could proceed through the criminal court system.Eight people are charged in connection with the death of Laverdiere, 25, who went missing in the North Battleford/Thunderchild First Nation area after attending the funeral of a friend, Tristen Cook-Buckle, 20. Her family last heard from her on May 1 and she was reported missing on May 12. Laverdiere’s remains were found outside North Battleford in July.Six of the eight people charged in connection with her death face first-degree murder and kidnapping charges, including Cook-Buckle’s mother, Nicole Cook of Edmonton.Story continues belowThis advertisement has not loaded yet,but your article continues below.“You don’t normally find seven or eight people involved in a common enterprise,” Roe said.The main strategic reason for charging multiple people together in the same case would be to have the witnesses testify once time at the preliminary hearing and once at trial, putting all of the evidence before one jury, Roe said.A decision to charge and try all accused together is ultimately the decision of the Crown, he noted. The Crown may consider the convenience of dealing with all of them at once, the potential cost to the taxpayer of having individual trials instead of one and the possibility of inconsistent verdicts, he said.On the other hand, each of the accused people can apply for severance — that is, to be tried separately on the evidence pertaining to them. If the interest of justice requires it, a judge can make an order to have an accused charged separately, Roe noted.For example, if the Crown has evidence that’s admissible against one person, but not another, the defence could argue that even though a jury may be instructed to ignore that evidence when considering the case against the second person, they may not be able to separate it, which would be prejudicial, Roe said. However, such an order is difficult to obtain.Having a joint trial of this size, particularly if it’s a jury trial, could mean that instructions to jurors could become more complicated. Each accused person’s defence lawyer also has the same right as the Crown to cross-examine the other accused people.Roe said a large number of people could be summoned for jury selection in this case, which he doesn’t feel would be a problem in the North Battleford judicial centre, where the accused people have made court appearances.“You’re going to have to have a very large jury pool on this one.”tjames@postmedia.comRelated New charges of first-degree murder, kidnapping laid against one accused in Tiki Laverdiere homicide Reporter’s note (Sept. 12): Peremptory challenges will be abolished once amendments under the act formerly known as Bill C-75 takes effect.
